Sheep on Encombe Hill


Our ewes are North Country Mules and Poll Dorset Horn x Mule; the rams are Suffolk, Dorset and Hampshire Downs, Dorset Horn, Texel and Charolais.
We lamb in January, March and May which means that, together with using the different breeds of rams, we can normally guarantee fresh lamb all year round.
The lambs are almost entirely fattened on grass, with a little supplementary feed necessary in the early spring and autumn/winter, resulting in a carcass that is lean but with just the right amount of fat for better cooking.

Typically a lamb box contains ½ lamb (guide price  £65 - £75)

  • 1 x 2.4kg leg joint – whole, halved or boned-and-rolled (b&r)
  • 1 x 2.75kg shoulder – whole, halved or b&r
  • 1 x 0.75kg breast – b&r or mince
  • 2 x chump steaks
  • 6 x loin chops
  • 7 x cutlets – single or as a rack
  • Liver and kidney may also be available
